Warning about Deceitful Baklava: Using Spinach Instead of Pistachios

Deceitful practices in baklava production to cut costs have become more common. While various tricks are used to make cheap baklava, experts are warning about baklava priced below 400 liras. As the days until Ramadan Bayram are numbered, baklava makers are rushing to prepare. However, baklava masters are cautioning against cheap baklava. The use of deceitful ingredients to reduce production costs is increasing. Instead of walnuts, peanuts, or cores are used; spinach and peas replace pistachios. Kerim Üre, President of the Antalya Pastry Chefs Guild, stated, “Ready-made syrups are used, do not prefer desserts with ready-made syrup. They may contain peanuts in the filling, they put seeds inside and use dye to make them green, try to make baklava with pistachios and use glucose instead of sugar. They use ready-made syrup without sugar to make it cheaper, and then they hang banners advertising the kilo of baklava for 120 liras selling.” Walnuts baklava is sold for 400-600 liras per kilogram, while Antep pistachio baklava is priced around 800-1000 liras per kilogram. There are health warnings for those who prefer to buy baklava sold for less than 400 liras per kilogram. Health warnings emphasize the risks of consuming baklava with substituted ingredients. Chairman of the Association of Food Engineers in Antalya, Ali Manavoğlu, evaluated the situation, suggesting that instead of pistachios, foreign substances, green vegetables like spinach and peas, and synthetic food colorings are being used to appeal to consumers. Manavoğlu remarked, “Synthetic food colorings can trigger allergic reactions, especially in children. Excessive consumption of these products can lead to problems like obesity, heart disease, and increased secretion of hormones due to glucose-like sugars, causing cancer, diabetes, and other health issues.” Consumers are advised not to compromise their health while indulging in cheap baklava.
